Auberge du Vallon de Van: authenticity, passion and friendliness
Nestled in the heart of the Vallon de Van, the Auberge is a place where authenticity and family spirit come together. Mathilde and Mattias settled here a year ago, determined to breathe new life into the place. The two met at the École Hôtelière de Lausanne (EHL), where their shared passion for catering immediately brought them together. After spending time in New York, Martigny and Geneva, they decided to return to nature. For Mathilde, the Auberge had a special significance: her parents often took her there when she was a child. Today, she is in charge of service while Mattias is in the kitchen, surrounded by a team that is as close-knit as it is welcoming.
Around them, Romain, a pillar of the Auberge and well known to regulars, brings the place to life and stays in the valley during the winter, but on the slopes. This season, Sébastien and Sylvain are in charge of the kitchen, joined by Carme, who has come from Spain, and Ambroise in the dining room. Together, they form a small family of seasonal workers, united by kindness and friendliness, both at work and in their time together outside the restaurant.
Built in 1946, the Auberge is now a must-visit destination for locals and hikers alike.
The regulars are always there: a solid team of seniors frequents the restaurant daily, breathing life and continuity into the place. In summer, tourists take over and discover this unique atmosphere for themselves.
In terms of new developments, autumn has some wonderful culinary experiences in store:
- September: a new menu to celebrate the end of summer in style
- 6 September: 1st anniversary of the Auberge's reopening with raclette and a drink from 4pm
- October: brisolée and brisolée royale throughout the month
- November: local game hunt with game sourced directly from the valley
Please note: from September, the Auberge will be closed on Tuesdays and Wednesdays until the road closes for the winter. Once the road closes, the Auberge will be open on Fridays, Saturdays and Sundays, and on request during the week for groups.
Finally, when asked about their favourite places in the Trient Valley, Mathilde and Mattias mention two iconic locations: the spectacular Dailley Gorges and Salanfe with its magnificent panoramic views. Two perfect experiences to prolong your enjoyment before or after a meal at the Auberge.
